Let's Bake Some Scones, Millie Knight's Paralympic Dreams, Making Friends, & More!

Time for a new Happy Hour, as always hosted by Life of a Blind Girl's Holly Tuke and RNIB Connect Radio's Paulina Kuchorew.
This week, we’re finding out about Millie Knight's Paralympic Dreams, a kids' bedtime story that aims to inspire visually impaired children to keep active and follow their sporting dreams.
RNIB Connect Radio's Allan Russell chats with Lucy Barrett from Energise Leisure Centre to find out how a free toolkit for the leisure industry from Thomas Pocklington Trust and UK Coaching, is helping make places like gyms and leisure centres more accessible for blind and partially sighted visitors.
Paulina is joined by blind Pastry Chef Amun Chawla for a lovely scone bake along. We'll pop the recipe at the bottom, so if you'd like to bake along with them, you can!
And finally, Toby Davey finds out about Sightline's one to one telephone befriending service for blind and partially sighted people.
Amun's Rustic Scones Recipe:
Flour 450g
Sugar 100g
Butter 100g
Eggs 1
Milk 150g
Baking powder 15g
Dryer fruit of your choice nuts or chocolate drops
Method
Set your oven to 180 degrees Celsius.
Place all dry ingredients into a bowl
Add the butter (room temp) and with your fingers rub together until all the butter is mixed in.
Next mix the egg and milk together and mix into-your dry mix to form a dough
Add this stage when your dough is ready split the dough in half and add your dried fruits nuts or chocolate drips
Roll the dough out to about 2 fingers thick. Using a round floured cutter cut out your scones and place onto a baking tray with parchment paper on. Egg wash using a whole egg and milk.
Bake for 15-18 mins until golden brown.
