Caramel Dip- 1 brick of cream cheese (softened) whipped with one bag of melted caramel balls (melt in 30 second increments in the microwave)
Grandma Gertie’s Famous Popcorn Ball Recipe:
- 2 Cups Sugar
- 2/3 Cup White Corn Syrup
- 2/3 Cup Water
- 1/2 Cup Butter
- 1 1/2 tsp Salt
- 1 1/2 tsp Vanilla
- 1 Cup Uncooked Plain Popcorn Kernels (3 quarts popped)
- Food Coloring of choice
Pop plain popcorn in air popper or paper bag in the microwave 1/4 cup at a time. Pour popped popcorn in a large bowl or roasting pan and remove un-popped kernels. Place bowl or roasting pan in 300 degree oven to keep warm.
Stir and cook corn syrup, water, butter, and salt until sugar in dissolved and a candy thermometer reaches 270 (or 260ish for a chewier texture). Add vanilla and food coloring and remove from heat.
Pour over popcorn stirring with a large spoon to coat evenly. We prefer to not form into balls as it is easier to eat.
