We love an easy recipe, today, Paulina returns to the kitchen to try a roasted red pepper pasta sauce.

Ingredients:
- 3 medium red peppers
- 2 tbsp of olive oil
- 1 cup of cashews
- 2 cloves of garlic (or more, if you like it! Paulina goes for 4)
- 1 tsp of thyme if you like the flavour, leave out if not as it's quite strong
- A big handful of fresh basil
- 1/2 cup of hot water
- Around 2/3 pack of rigatoni pasta (out of a 500 gram pack) or any other pasta of choice
- half a tsp of black pepper and salt each, and then adjust later to your own preference
Method:
1. Set your oven to 200 celcius.
2. Roughly cut or break your peppers and take out the cores.
3. Coat in olive oil.
4. Put in the oven on some baking paper for about 20 minutes.
5. In the meantime, add your cashews, basil, garlic, salt, pepper, and thyme (if using) to your blender.
6. Boil your pasta whilst you wait.
7. Once peppers are done, add them to the blender along with a cup of hot water and blitz until smooth.
8. Check if needs more salt and pepper and serve with your pasta or put the sauce aside in the fridge and reheat in a pot if serving later.
Notes: If the sauce is too thick as you blend, add a dash of water. If you don't have a strong blender, you can soak your cashews overnight in water.
